Celiacs and gluten-free eaters have to be alert because wheat flour is in many, many foods. Anytime you see a recipe that lists flour or all purpose flour or self-rising flour, these all refer to wheat flour. So, one of the first tricks that gluten-free cooks use is substitution. By simply using rice or amaranth flour for the wheat flour, you can often get the same results without noticeably changing the flavor of the dish.

This easy substitution does not work for all recipes, especially breads made with yeast. Yeast breads rely on the interaction of yeast and wheat gluten to rise. But cornbread is different.

Cornbread is a "quick" bread. Quick breads depend on a chemical reaction between the leaveners like baking powder and baking soda and the acids like buttermilk to rise the bread. So, no gluten required.

Along with these recipes, you might consider the recipes for Corn Fritters. Some of the fritter recipes use flour. But the amounts are small and could easily be exchanged with an acceptable flour, without noticeably altering the delicious results.
